Coconut & Ube (Purple Yam) Ice Cream

Another homemade ice cream recipe to top off a great dinner. This was perfect after Pinakbet or any delicious filipino dinner! Quick and easy and again, no eggs! Super creamy, and oh, so masarap! Ube is the filipino word for Purple Yam.

















Ingredients:
1 cup Whole Milk
1 (14oz) can of Sweetened Condensed Milk
1 Pint Heavy Cream
1 Cup Ube (Purple Yam can be purchased in Filipino grocery store)
1/4 teaspoon Coconut Extract (optional)
2 Tablespoons Coconut Flake (optional)

Equipment:
Blender
Ice Cream Maker
Spatula


Instructions:
In a blender, combine the Sweetened Condensed Milk, Heavy Cream, Whole milk and mix thoroughly.

Add Ube and (optional) Coconut Extract and mix thoroughly.

Pour into container of ice cream maker and freeze according to manufacturer's instructions.

Slowly add (optional) Coconut Flake to the ice cream mixture.

When ice cream is done, using a rubber spatula, transfer ice cream into a container.

Set overnight in freezer for complete ripening process.
