Homemade Pineapple Ice Cream

Another homemade ice cream recipe to top off a great dinner. This was perfect after (crock-pot) Kalua Pig! Quick and easy and again, no eggs! Super creamy, light and oh, so Pineapple-ly!


Ingredients:
1 cup Whole Milk
1 (14oz) can of Sweetened Condensed Milk
1 Pint Light Cream
1 teaspoon Pineapple Extract (or according to taste)
1 8oz can of crushed Pineapple, drained well

Equipment:
Blender
Ice Cream Maker
Spatula


Instructions:
In a blender, combine the Sweetened Condensed Milk, Light Cream, Whole milk and mix thoroughly.

Add Pineapple Extract and mix thoroughly.

Pour into container of ice cream maker and freeze according to manufacturer's instructions.

Slowly add crushed Pineapple to the ice cream mixture.

When ice cream is done, using a rubber spatula, transfer ice cream into a container.

Set overnight in freezer for complete ripening process.
